Nectarines
The nectarine is a smooth-skinned variety of peach, but with a firmer texture, sharper taste and a more highly scented aroma. Paler skinned fruits tend to have a finer flavour than yellow ones. The colour of the flesh also affects the flavour; white-fleshed nectarines are slightly sweeter and more delicate.

White Nectarines
Nectarines are usually much juicier than peaches, and may be eaten (usually somewhat messily) as a dessert fruit. They may also be added to fresh fruit salads, puréed and used to make to ice creams or sorbets or sliced into tarts and other desserts.
