Gooseberries

Although all gooseberries are pea-green in colour when immature, they can ripen into either golden, purple, green or red fruit depending on their type. The tart green variety is excellent for cooking, whilst the sweeter golden and red varieties are perfect for eating raw.

Available from May to September, gooseberries should be 'topped and tailed' before use, by snipping off the stem and flower ends from each berry. They may then be stewed and puréed with a little sugar to make a classic sauce for mackerel or added to cream to make gooseberry fool or ice cream.
