Raisins
Raisins are produced from white seeded Spanish Muscat grapes, of the variety 'Muscatel'. They may be sold on their own, or with sultanas, currants and mixed peel as mixed dried fruit. It's worth noting that Californian raisins are actually sultanas, made from the Thompson seedless variety of grapes.

Raisins are darker in colour than sultanas, lighter than currants, and larger than both. Their intensely sweet flavour means that they may be eaten as a dessert or snacking fruit, and are useful in cooking for making cakes, muesli and Christmas puddings. They are also ideal for adding to savoury rice dishes, salads, stuffed vegetables or couscous.
