Dried Cherries

Dried cherries can be produced from both sweet and sour pitted cherries. Dried sour cherries are bright mahogany-red with an intense flavour and acid-sweet tang. They make an ideal sauce or stuffing for lamb or duck, and may also be used for puddings and sweet sauces. Dried sweet cherries are lighter in colour and less tangy than the sour ones, but may be used in much the same way. They may also be made into a dessert with sugar, lemon juice and cream or simply eaten as a snack.
