Preserved Fruits

Drying and preserving fruit concentrates its natural sweetness and taste, allowing it to infuse with other ingredients in a range of sweet and savoury dishes. For example, currants, sultanas, raisins and candied fruit are essential for making fruit puddings such as Christmas cake, whilst prunes and dried apricots are delicious when cooked with lamb, honey and spices.
