Rosehips
Rose hips are the scarlet-coloured fruit that grow from either wild or domestic rose bushes. Although typically harvested at the end of the growing season, fruit picked after the first or second frost contains a higher amount of concentrated sugars, yielding a sweeter and more flavourful rosehip.

High in vitamin C, rose-hips are commonly used to make rosehip syrup, tea, jelly or sauce. However, care must be taken to strain out the sharp, prickly hairs that surround the seeds in each hip; this may be done by steeping the minced hips in boiling water, then passing the liquid through double muslin at least twice.
