Pistachios
The pistachio nut is a distinctively pale green nut with a mild, sweet flavour and a slightly chewy texture. Pistachios are available either shelled or in their natural shell; this splits open as the nut matures, exposing the nut and making it easy to remove from its casing.

Grown in Italy, Iran, Turkey and California, pistachios are usually roasted and salted to eat as a snack or with drinks, or used in a range of sweet and savoury recipes, such as risottos, bakes, stuffings and pâtés. Their delicate green colour also makes them perfect for adding colour, as well as flavour and texture to sweets and ice creams.
