Grapefruits
A large, slightly tart citrus fruit with a yellow skin, sometimes tinged with green or red. Grapefruits are categorised by the colour of their pulp:
- White: yellowish-white flesh

- Pink: pale pink or rosy flesh

- Ruby: ruby-red flesh

Although the colour of the pulp doesn't affect the flavour, pink and ruby grapefruits have a higher amount of vitamin A.
The grapefruit is used primarily as a breakfast fruit, but is also popular for fruit salads, sorbets and mousses. Grapefruit segments may also be used in savoury salads, mixed with avocado or oranges and mint, and served on a bed of lettuce.
