Soused Herring

Soused herring are fish that have been preserved by the action of vinegar. Although soused herring can be bought in specialist shops, the process can easily be carried out at home by marinating the fish in a vinegary marinade to which herbs and spices are added.

German bratheringe is a particularly delicious form of soused herring; the fish is coated in flour and fried until golden brown, and then steeped for 24 hours in a boiled herb, spice and vinegar marinade.
