Grayling
Known as ombre (France), temolo (Italy), tÃmalo (Spain).
Grayling is a delicious, thyme-scented fish that thrives in cold, crystal-clear, turbulent rivers. It is a elegant, silver fish, with finely marked geometric scales and a long, spotted back fin. It often lives alongside trout and is very similar in taste and texture.

Grayling are relatively small - usually less than 900 g (2 lb), and never more than 2 kg (4 lb). They are best cooked by brushing with butter, flavouring with thyme and then grilling, or by gently frying in clarified unsalted butter.
