Truffle Oil

Truffle oil is produced by infusing a high quality oil (for example, extra virgin olive oil) with truffles - the most highly prized of all fungi. When the truffle is soaked in the oil, it releases its rich, earthy flavour, creating a gourmet oil that is strong in taste and aroma. Adding just a few drops of the oil to foods such as pasta, meat, fish, risotto, sauces or salads imparts a pungent, truffle flavour to the dish.

It is worth buying truffle oil in relatively small quantities as it loses some of its intense aroma and flavour if stored for too long.
