Apricot Kernel Oil
Apricot kernel oil is obtained from the dried kernels of the apricot fruit. The oil is extracted from the stone using high pressure (known as expeller pressing), with the kernel being subjected to a pressure of up to 2,100 kg/sq cm. This resulting oil keeps much of its flavour, aroma and nutritional value.

It has a mild flavour that works well in salad dressings, and has a relatively high smoke point, making it suitable for high heat cooking methods, such as sautéing and pan-frying. It is low in saturated fats (6%), high in monounsaturated fat (60%) and contains no trans-fatty acids, making it a relatively healthy oil to cook with.
