Semi-soft cheeses are characterised by their firm but elastic feel. They are sometimes soft and tender, but, unlikel true soft cheeses, do not become runny as they mature. They are excellent for serving as part of a cheese plate, or simply for snacking. Some may also be heat-tolerant enough to be used as cooking cheeses.
