Chelsea Bun

The Chelsea bun was created in the 18th century at a London bakery called the 'Bun House of Chelsea', which was a favoured establishment of the Hanoverian royalty.

The yeast leavened dough is made using eggs, butter, sugar and spices, then rolled out flat to form a large square. The surface of the dough is sprinkled with raisins, sultanas, brown sugar and mixed spice and dotted with butter before being rolled up (like a Swiss roll) to enclose the filling. The roll is then cut into thick slices and baked. Just before the buns are cooked, they are glazed with honey or a sugar syrup and returned to the oven for 2 to 3 minutes before serving.
