Pane di Semola

Pane di semola, also known as semolina bread, is made using a starter dough that is allowed to ferment overnight. When this is ready, the dough is mixed with a combination of durum wheat flour (semolina) and either plain flour or strong flour.

This Italian bread has a soft, open-textured, flavourful crumb that is slightly golden in colour due to the semolina. The deliciously crispy crust is often dusted with more semolina to give it a grainy texture.
