Trussing Equipment

Trussing is the process of tying a bird into a neat shape with string and/or skewers before cooking. Trussing a bird keeps it in good shape, and may be carried out using a trussing needle and un-dyed string.
A trussing needle is very long (at least 25 cm or 10 in), with a very sharp point that enables it to pierce the bird from one side to the other, through legs or wings and the body in between.
