Rolling Pins

Rolling pins are used to transform lumps of dough into smooth, flat discs of pastry. They are available in a range of different materials, including wood, marble, stainless steel glass and polypropylene. Wood rolling pins are an excellent choice for most tasks; however, you may want to choose a cooler metal or marble pin if you make a lot of high-fat pastry. Ceramic and glass rolling pins break easily and their smooth surface will not hold a dusting of flour.

Choose a rolling pin that will be long enough to roll out the size of pastry you want to work with. Selecting a pin without handles will maximise its rolling capacity, although some people may find this type of pin difficult to control.
