Potatoes for Frying

Method

  1. Par- boil until almost cooked.
  2. Cut into slices or chunks.
  3. Fry in hot fat, turning them frequently until they are golden and crispy.
  4. Drain and serve immediately; fried potatoes soon turn soggy if left covered to keep warm.
