Cooking with Apricots
Plump, ripe apricots are delicious served on their own as a dessert. Alternatively, they may be poached in sugar syrup and brandy or used in flans, pies and tarts, sweetened with vanilla sugar.
Apricots can be stoned by cutting them along their indentation line with a sharp knife, then twisting the two halves in opposite directions to separate them.
