Steaming Fish
Fish may be steamed between two plates or in a steamer to produce a delicate dish.
Method
- Place the fish in a steamer or between two buttered plates over a large pan of boiling water. Do not allow the fish to touch the water.
- Gently boil the water for the times shown in the table below; the fish will flake away easily when it is done.
